Definition of Activity
One unit of enzyme activity corresponds to the amount required to hydrolyze 1 µmol of Suc-AAPF-pNA at 95°C, pH7.0, in one minute.
Suc-AAPF-pNA: N-succinyl Ala-Ala-Pro-Phe p-nitroanilide.
